Easy Vegan Mocha Caramel Overnights Oats

Some mornings you have to step up your breakfast game to keep it exciting and leave you feeling motivated for the day. These mocha-caramel-peanut butter overnight oats from the Nourishing Vegan Every Day cookbook are just the ticket. 

What you need:

1 cup oats
2 tablespoons chia seeds
¾ cup coconut yogurt, divided
1¼ cups vegan milk
1 teaspoon vanilla extract
2 tablespoons cacao powder
2 teaspoons espresso powder or 2 shots of cooled espresso
2 tablespoons maple syrup, divided
3 tablespoons peanut butter
¼ teaspoon salt
1 tablespoon chopped peanuts
1 tablespoon coffee beans, for decorationVegNews.OvernightOats

What you do:

  1. In a Mason jar, stir oats, chia seeds, ½ cup coconut yogurt, milk, vanilla, cacao powder, espresso, and 1 tablespoon of maple syrup. 
  2. Cover and leave overnight in refrigerator.
  3. In a small bowl, stir peanut butter, 1 tablespoon of maple syrup, and salt.
  4. Serve in two mason jars, layering oats with remaining coconut yogurt and peanut butter sauce. Top with peanuts and coffee beans.
